Description

Deliciously sweet and crunchy chocolate-covered caramel sandwiches made with Ritz crackers!


Ingredients

Scale
  • 12 oz soft caramels
  • 2 tablespoons heavy cream
  • 48 Ritz crackers (about 1 sleeve)
  • 12 oz white chocolate chips or melting wafers
  • 3 tablespoons holiday sprinkles

Instructions

  1. Unwrap the caramels and place them in a microwave-safe bowl with the heavy cream. Microwave in 30-second intervals, stirring each time, until smooth and melted.
  2. Lay out half the Ritz crackers on a parchment-lined baking sheet.
  3. Spoon about 1 teaspoon of the melted caramel onto each cracker.
  4. Top with another cracker to form a sandwich. Let them sit for 5 minutes.
  5. In another bowl, melt the white chocolate in short bursts in the microwave, stirring until smooth.
  6. Dip each caramel sandwich into the melted white chocolate using a fork or dipping tool.
  7. Tap off excess chocolate and place on the parchment-lined sheet.
  8. Immediately sprinkle with holiday sprinkles before the chocolate sets.
  9. Let cookies rest at room temperature or refrigerate until the coating hardens.
  10. Serve or store in an airtight container.
