Deliciously sweet and crunchy chocolate-covered caramel sandwiches made with Ritz crackers!
Ingredients

- 12 oz soft caramels
- 2 tablespoons heavy cream
- 48 Ritz crackers (about 1 sleeve)
- 12 oz white chocolate chips or melting wafers
- 3 tablespoons holiday sprinkles
Instructions
- Unwrap the caramels and place them in a microwave-safe bowl with the heavy cream. Microwave in 30-second intervals, stirring each time, until smooth and melted.
- Lay out half the Ritz crackers on a parchment-lined baking sheet.
- Spoon about 1 teaspoon of the melted caramel onto each cracker.
- Top with another cracker to form a sandwich. Let them sit for 5 minutes.
- In another bowl, melt the white chocolate in short bursts in the microwave, stirring until smooth.
- Dip each caramel sandwich into the melted white chocolate using a fork or dipping tool.
- Tap off excess chocolate and place on the parchment-lined sheet.
- Immediately sprinkle with holiday sprinkles before the chocolate sets.
- Let cookies rest at room temperature or refrigerate until the coating hardens.
- Serve or store in an airtight container.
Notes
- For best results, use good quality white chocolate for a smoother finish.
- Feel free to use different types of sprinkles for variety.
