Ingredients

  • 1 pound lean ground beef
  • 1 cup chunky salsa
  • 10 ounces red enchilada sauce
  • 8 8-inch tortillas
  • 8 ounces Borden® Cheese Thick Cut Shredded Four Cheese Mexican

Instructions

  1. Preheat your oven to 350°F to ensure your enchiladas bake evenly.
  2. In a large skillet, heat your lean ground beef over medium-high heat. Cook until browned and no longer pink, about 7-10 minutes, then drain any excess fat.
  3. Stir in 1 cup of chunky salsa to the beef. Cook for another 2-3 minutes until everything is heated through and the flavors meld beautifully.
  4. Spread about half of the red enchilada sauce at the bottom of a greased 9×13-inch baking dish.
  5. Warm the tortillas as directed on the package. Place about 1/4 cup of the beef mixture down the center of each tortilla, topped with a heaping tablespoon of the cheese.
  6. Tightly roll each tortilla and place seam-side down in the baking dish. Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
  7. Cover the dish tightly with aluminum foil and bake for 30-35 minutes, until everything is hot and bubbly.
