- 1 pound lean ground beef
- 1 cup chunky salsa
- 10 ounces red enchilada sauce
- 8 8-inch tortillas
- 8 ounces Borden® Cheese Thick Cut Shredded Four Cheese Mexican
Instructions
- Preheat your oven to 350°F to ensure your enchiladas bake evenly.
- In a large skillet, heat your lean ground beef over medium-high heat. Cook until browned and no longer pink, about 7-10 minutes, then drain any excess fat.
- Stir in 1 cup of chunky salsa to the beef. Cook for another 2-3 minutes until everything is heated through and the flavors meld beautifully.
- Spread about half of the red enchilada sauce at the bottom of a greased 9×13-inch baking dish.
- Warm the tortillas as directed on the package. Place about 1/4 cup of the beef mixture down the center of each tortilla, topped with a heaping tablespoon of the cheese.
- Tightly roll each tortilla and place seam-side down in the baking dish. Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Cover the dish tightly with aluminum foil and bake for 30-35 minutes, until everything is hot and bubbly.
