A delicious blueberry cobbler that is perfect for dessert.

- 4 cups fresh or frozen blueberries
- 3/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons cornstarch
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- Vanilla ice cream as desired
Instructions
- Preheat the oven to 180°C (350°F).
- Combine blueberries, sugar, lemon juice, lemon zest, cornstarch, and vanilla extract in a large bowl and mix gently until evenly coated.
- Transfer the mixture into a greased 9×13-inch baking dish and spread into an even layer.
- Whisk flour, sugar, baking powder, and salt in a separate bowl.
- Add milk and melted butter, then stir until a thick, smooth batter forms. Mix just until combined to keep the texture light.
- Spoon the batter over the blueberry filling in small portions, leaving some gaps so the filling can bubble through during baking.
- Place the dish in the oven and bake for 40–45 minutes until the topping turns golden brown and the filling bubbles around the edges.
- Remove from the oven and let it rest for 10 minutes to allow the filling to thicken.
- Scoop the cobbler into serving bowls and top with vanilla ice cream. Serve warm for the best texture and flavor.

- Make sure to use fresh or properly thawed frozen blueberries.
