Description

A delicious blueberry cobbler that is perfect for dessert.


Ingredients

  • 4 cups fresh or frozen blueberries
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • Vanilla ice cream as desired

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Combine blueberries, sugar, lemon juice, lemon zest, cornstarch, and vanilla extract in a large bowl and mix gently until evenly coated.
  3. Transfer the mixture into a greased 9×13-inch baking dish and spread into an even layer.
  4. Whisk flour, sugar, baking powder, and salt in a separate bowl.
  5. Add milk and melted butter, then stir until a thick, smooth batter forms. Mix just until combined to keep the texture light.
  6. Spoon the batter over the blueberry filling in small portions, leaving some gaps so the filling can bubble through during baking.
  7. Place the dish in the oven and bake for 40–45 minutes until the topping turns golden brown and the filling bubbles around the edges.
  8. Remove from the oven and let it rest for 10 minutes to allow the filling to thicken.
  9. Scoop the cobbler into serving bowls and top with vanilla ice cream. Serve warm for the best texture and flavor.
