Description

A delectable dessert combining fresh raspberries with creamy mascarpone and coffee-soaked ladyfingers.

Ingredients

Scale
  • 2 cups fresh raspberries
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee (cooled)
  • 1 tablespoon coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Unsweetened cocoa powder for dusting
  • Extra raspberries for garnish

Instructions

  1. In a large mixing bowl, whisk the heavy cream until stiff peaks form. Gently fold in the mascarpone cheese, powdered sugar, and vanilla extract until smooth and combined.
  2. In another bowl, combine the cooled brewed coffee and coffee liqueur (if using). Stir well and set aside.
  3. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Arrange them in a single layer at the bottom of your dish.
  4. Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it into an even layer.
  5. Sprinkle half of the fresh raspberries over the mascarpone layer, distributing them evenly.
  6. Dip another layer of ladyfingers in the coffee mixture and place them on top of the raspberries. Spread the remaining mascarpone mixture over this layer.
  7. Top with the remaining raspberries in an even layer, pressing them gently into the cream.
  8. Cover the dish with plastic wrap and refrigerate the tiramisu for at least 4 hours, or overnight for the best flavor.
  9. Before serving, dust the top with cocoa powder for a classic finish.
  10. Garnish with extra fresh raspberries if desired and serve chilled.

Notes

  • This dessert can be made a day in advance for optimal flavor.
  • Ensure that the coffee is cooled completely before dipping the ladyfingers.
