Description
A delectable dessert combining fresh raspberries with creamy mascarpone and coffee-soaked ladyfingers.
Ingredients
Scale
- 2 cups fresh raspberries
- 1 cup heavy cream
- 8 oz mascarpone cheese
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee (cooled)
- 1 tablespoon coffee liqueur (optional)
- 24 ladyfinger cookies
- Unsweetened cocoa powder for dusting
- Extra raspberries for garnish
Instructions
- In a large mixing bowl, whisk the heavy cream until stiff peaks form. Gently fold in the mascarpone cheese, powdered sugar, and vanilla extract until smooth and combined.
- In another bowl, combine the cooled brewed coffee and coffee liqueur (if using). Stir well and set aside.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Arrange them in a single layer at the bottom of your dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it into an even layer.
- Sprinkle half of the fresh raspberries over the mascarpone layer, distributing them evenly.
- Dip another layer of ladyfingers in the coffee mixture and place them on top of the raspberries. Spread the remaining mascarpone mixture over this layer.
- Top with the remaining raspberries in an even layer, pressing them gently into the cream.
- Cover the dish with plastic wrap and refrigerate the tiramisu for at least 4 hours, or overnight for the best flavor.
- Before serving, dust the top with cocoa powder for a classic finish.
- Garnish with extra fresh raspberries if desired and serve chilled.
Notes
- This dessert can be made a day in advance for optimal flavor.
