Description

A hearty and delicious ground beef and potato casserole perfect for a family dinner.


Ingredients

  • 1 pound ground beef
  • 6 medium Russet potatoes, peeled and thinly sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons tomato paste
  • 1/2 cup beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley
  • Non-stick cooking spray or butter

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil and sauté onion until translucent. Add garlic, then the ground beef. Cook until browned and drain excess fat.
  3. Stir in tomato paste, salt, pepper, paprika, oregano, crushed red pepper flakes, and beef broth. Simmer for 5 minutes.
  4. Slice potatoes to 1/8-inch thickness. Rinse under cold water and pat dry.
  5. Layer potatoes in the dish, then spoon over some beef mixture, followed by cheese. Repeat layers, finishing with cheese on top.
  6. Cover with foil and bake for 45 minutes. Uncover and bake an additional 15–20 minutes until bubbly and golden.
  7. Let rest for 10 minutes before serving. Garnish with parsley.

  • This casserole can be made ahead of time and refrigerated before baking.
