A hearty and delicious ground beef and potato casserole perfect for a family dinner.

- 1 pound ground beef
- 6 medium Russet potatoes, peeled and thinly sliced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons tomato paste
- 1/2 cup beef broth
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley
- Non-stick cooking spray or butter
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a skillet, heat olive oil and sauté onion until translucent. Add garlic, then the ground beef. Cook until browned and drain excess fat.
- Stir in tomato paste, salt, pepper, paprika, oregano, crushed red pepper flakes, and beef broth. Simmer for 5 minutes.
- Slice potatoes to 1/8-inch thickness. Rinse under cold water and pat dry.
- Layer potatoes in the dish, then spoon over some beef mixture, followed by cheese. Repeat layers, finishing with cheese on top.
- Cover with foil and bake for 45 minutes. Uncover and bake an additional 15–20 minutes until bubbly and golden.
- Let rest for 10 minutes before serving. Garnish with parsley.
Notes
- This casserole can be made ahead of time and refrigerated before baking.
- Feel free to add your favorite vegetables to the layers for extra flavor.
