Description
A delicious Italian appetizer made with toasted baguette slices topped with a fresh tomato mixture.

- 1 French baguette, sliced into 1/2-inch thick pieces
- 3 tablespoons olive oil (plus more for brushing)
- 2 cups ripe Roma tomatoes, finely diced (about 4–5 medium tomatoes)
- 2 garlic cloves, peeled (plus 1 extra for rubbing on bread)
- 1/3 cup fresh basil leaves, thinly sliced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 teaspoon balsamic vinegar
- 1/4 cup shredded Parmesan cheese (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Arrange the baguette slices on a baking sheet in a single layer.
- Brush each slice with olive oil on both sides.
- Toast in the oven for 5-7 minutes, turning once halfway through, until golden and crisp.
- Remove from oven, and while still warm, gently rub one side of each toast with the cut side of a raw garlic clove.
- In a medium bowl, combine the diced tomatoes, 2 tablespoons olive oil, minced garlic (from 2 cloves), sliced basil, salt, black pepper, and balsamic vinegar. Mix gently to combine.
- Spoon a generous amount of the tomato mixture onto each toasted baguette slice. If desired, sprinkle with shredded Parmesan cheese.
- Arrange bruschetta on a platter and serve immediately for the freshest taste and best texture.
