Description

A delicious and creamy chicken casserole featuring artichoke hearts and cheddar cheese.


Ingredients

Scale
  • 1 pounds chicken breasts (roasted and shredded)
  • ½ cup cottage cheese
  • ½ cup artichoke hearts (drained and quartered)
  • ⅓ cup 0% Greek yogurt
  • ½ cup white cheddar cheese (grated)
  • ¼ cup pepperoncini (chopped small)
  • ¼ cup yellow onion (chopped small)
  • 2 tablespoons jalapeno (finely diced, remove seeds and veins)
  • 1 tablespoon pepperoncini juice
  • kosher salt (to season)
  • cracked black pepper (to season)
  • green onion (as garnish)

Instructions

  1. Preheat the oven to 375 degrees.
  2. Add the chicken breasts to a baking tray lightly sprayed with avocado oil cooking spray.
  3. Drizzle the chicken with a touch more avocado oil and season it with kosher salt and cracked black pepper.
  4. Roast chicken at 375 degrees for 25-30 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Set it aside to cool.
  5. Once cool, add the chicken to a stand mixer with a paddle attachment. Set it on low for 30-60 seconds or until the chicken is broken down into small pieces. Do not over mix the chicken or it can become mushy.
  6. If you do not have a stand mixer, you can shred the chicken using your hands or two forks. Once shredded, chop it into small pieces.
  7. Next, add the shredded chicken to a mixing bowl with the cottage cheese, Greek yogurt, chopped pepperoncini, pepperoncini juice, quartered artichoke hearts, finely diced onion, jalapeno, and grated white cheddar cheese. Season with kosher salt and cracked black pepper.
  8. Fold to combine. Once well combined, garnish with green onion and enjoy.
