Homemade Pastrami Sandwich

Description

A delicious homemade pastrami sandwich with layers of flavor and creamy dressing.


Ingredients

Scale
  • 1 kg homemade pastrami
  • 10 slices light rye bread
  • 10 slices Swiss cheese
  • Butter (for spreading)
  • 1 tbsp grapeseed oil
  • 1/2 onion (thinly sliced)
  • 350 g white cabbage (thinly shredded)
  • 1 1/4 cups cider vinegar
  • 1/3 cup water
  • 1 tsp salt
  • 2 tsp sugar
  • 1 tsp caraway seeds (optional)
  • 1 tbsp onion (finely minced)
  • 1 tbsp dill pickle or gherkin (finely minced)
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream (can sub more mayo)
  • 2 tbsp sriracha, spicy ketchup or chili sauce
  • 3 tsp horseradish (jar, to taste)
  • 1 tsp Worcestershire sauce
  • 1/4 tsp sweet paprika

Instructions

  1. Mix ingredients and refrigerate for 20 minutes+ (keeps for 2 weeks).
  2. Dissolve sugar and salt in vinegar.
  3. Heat oil in a large pot over medium heat. Add onion and cook for 2 minutes to soften, not letting it brown.
  4. Add cabbage, vinegar, water and caraway seeds, give it a toss.
  5. Cover and cook on low for 15 minutes, mixing once at 10 minutes.
  6. Transfer to a container (including liquid), cool until just warm. Keeps for 2 weeks in the fridge.
  7. Thinly slice cold pastrami. Place in a container with a couple of tablespoons of reserved pastrami liquid.
  8. Microwave to warm through or use another method (cover with foil and place in oven).
  9. Preheat grill/broiler to medium-high with the shelf about 25cm/10 inches from the heat source.
  10. Toast bread. Spread with butter, then 1 tbsp Russian Dressing on each piece.
  11. Pick up pastrami and let excess juices drip away, then place on bread.
  12. Do the same for sauerkraut, pile onto pastrami, then top with cheese.
  13. Also place cheese on the other slice of bread (with just Russian Dressing).
  14. Place under the grill until cheese is just melted. Sandwich together and devour while hot.

Notes

  • Keeps for 2 weeks in the fridge.
  • Can substitute sour cream for more mayonnaise if desired.
